Garden pasta with a butternut squash and cremini mushroom sauce

The sauce is made creamy from the mashed up butternut squash

  • 6oz veggie plus pasta
  • 2c butternut squash roasted and mashed
  • 1c cremini mushrooms
  • 2 cloves garlic
  • 1 small sweet onion
  • 2T olive oil
  • 1tsp Italian seasoning
  • 5 fresh parsley leaves
  • a pinch of red pepper flakes

Cook pasta as directed. Sautee onion, garlic, and mushrooms in oil. For extra liquid use chicken broth while sautéing. Add in all seasonings and squash. Mix in pasta with all ingredients and top with fresh grated parmesan.
