Cajun Pork chop with kale and white bean side dish
This delicious dish can be made less spicy for a more family friendly version.
4 pork chops
1T olive oil
1tsp cayenne pepper
1tsp chili powder
Mix all ingredients together and rub on each side of chops. Place under broiler for 7 minutes on each side.
6 C kale (remove all the thick stems)
1 can diced tomatoes
1 can white beans (drained and rinsed)
2 clove garlic
1 white onion
2 C chicken stock
Sautee the onion and garlic in 2-3 T of the chicken stock until translucent. Add the drained and rinsed beans as well as the tomatoes with juice. Add in the chicken stock and kale toss to coat, cover and simmer for 10 minutes. Use a slotted spoon to serve the side dish.
