Meals and Grocery List for week 2/23/15

The 4 meals below will be accompanied by a grocery list today, followed by a picture with completed product as they are made Monday-Thursday.

A couple of staples you will need on hand to create these meals are olive oil, balsamic vinegar  non-stick cooking spray, salt/pepper.

Some ingredients for the meals are interchangeable so I only list them one time, but they will be used multiple times.

 

Chicken Avocado Burritos  with Roasted Broccoli

2 chicken breast ( I like Bare chicken hormone free)

1 bag shredded reduced fat cheddar cheese

1 large ripe avocado

1 head of broccoli (or bag of fresh broccoli florets)

1 bunch of cilantro

pack of large burritos whole wheat

light sour cream

Cauliflower Pizza

1 head of cauliflower

bag of Italian shredded cheese

head of garlic

eggs

bunch of parsley

cherry tomatoes

arugula

3 slices prosciutto (from deli)

(for this recipe you can pick your own toppings)

Cranberry and Cream Cheese stuffed Pork Tenderloin with a Demi-glaze Reduction Sauce and Asparagus

Pork tenderloin

1 bunch of asparagus

bag of dried cranberries

block of cream cheese

rosemary seasoning

Italian bread crumbs

corn starch

balsamic vinegar

Shrimp Scampi Zoodles 

3 zucchini

stick unsalted butter

12 shrimp (I buy frozen medium size)

1 lemon

    it all sounds very yummy. I like the Bare chicken breast too.
