Grilled Chicken Avocado Burritos & Roasted Broccoli
This is a must have in your rotation of recipe’s!
Grilled Chicken Avocado Burritos
2 chicken breasts grilled and cubed (season with Cajun or an all purpose seasoning to taste) see my kitchen tip on how to grill pressed chicken without a Panini press
1 avocado halved and diced
2 large whole wheat burritos
2 T light sour cream
2 T freshly chopped cilantro
1 tsp canola oil
Cheddar cheese is optional but not included in the calorie count
Grill the chicken let cool, cube, and separate into halves . Cube the avocado and separate into halves. Lay out the burritos and spread bottom of each with 1tsp of sour cream. Top with cubed chicken half avocado and 1 T cilantro. Repeat this for other burrito. Roll each burrito folding in the sides to leave no open ends. Heat grill pan add the oil and lay burritos down grill on each side for 2 minutes or until golden brown. Remove plate and top with remaining sour cream and cilantro for garnish. I top my with some Sriracha for some extra kick!
1 head of washed broccoli florets
1 tsp olive oil (or mist with an olive oil mister)
2 cloves of fresh garlic minced
Preheat oven to 450 degrees. Toss the broccoli florets with all ingredients to coat. Roast in the oven 20-25 minutes until crispy on edges for the perfect taste.
A lot of people don’t like broccoli but I would encourage you to try this one to see if it can give you new outlook on the vegetable.
