Cauliflower Pizza topped with Prosciutto, Sun Dried Tomato, and Arugula

Cauliflower Pizza topped with Prosciutto, Sun Dried Tomato, and Arugula

Ingredients:
  •  1 medium head cauliflower
  • 1 large egg
  • 1/4  C finely shredded mozzarella cheese
  • 1/4 C Parmesan cheese
  • 1/4 C Panko bread crumbs
  • 1 tsp. Italian seasoning
  • pinch of red pepper flake
Instructions:

Place cauliflower in  food processor and process until it is in fine, rice-like pieces (7-8 pulses). Place cauliflower in a microwave safe bowl with 2 T of water cover and microwave 3-4 minutes or until tender.  Wrap the cauliflower in a kitchen towel and squeeze all the excess water out.  This step is CRITICAL to not have mushy crust!

Pre-heat oven to 425 degrees with the pizza stone in there.

In a medium bowl stir in egg (lightly beaten), bread crumbs, cheeses, and seasoning.  Add the cauliflower and mix well with hands.

Place a piece of parchment paper on the heated pizza stone and form the cauliflower dough into desired shape and flatten.

Bake the crust for 15 minutes or until golden brown.

Remove from oven and top with desired sauce and ingredients. I used 1 T olive oil,  3 slices of prosciutto, sun dried tomato, and shaved parmesan.

After baking again for an additional 5 minutes I topped with fresh arugula and Balsamic Glaze ( an upcoming kitchen tip)

This was a great alternative to regular pizza crust with endless possibilities for toppings.
