Creamy Chicken Quinoa and Broccoli Casserole
This was a huge success with the whole family, my sister, and her daughter! It provided plenty of food to feed three adults and 4 kids. This would be a great comfort food meal to make on a Sunday night for family dinner. This meal would also be great if you made it ahead of time and cooked it the night you wanted to. It is a little time consuming for a Monday but well worth it if you can spare the time. I used a recipe from a website called Pinch of Yum. A few things I would recommend when making this is plan ahead, if you have left over grilled chicken already ready to go, this would eliminate cooking the chicken from a raw state. You could do the same with the broccoli, if you steam a bunch for the week, set aside three cups for this casserole. I also added three cloves of garlic minced to the liquid mixture for more flavor.
