Cauliflower Grilled Cheese and Creamy Tomato Soup
Cauliflower Grilled Cheese
- 1 head cauliflower
- 2 eggs
- ¼ C mozzarella
- Salt pepper
- Block of sharp cheddar cheese
- 8 slices cooked bacon (optional)
Preheat oven to 450°.
Line a baking sheet with parchment paper and spray it with cooking spray. Chop the cauliflower into pieces and place in a food processor.
In a food processor rice the cauliflower florets (it should be evenly chopped but not completely pulverized).
Transfer the cauliflower rice to a mixing bowl, add egg, mozzarella, salt, pepper and mix well.
Spread cauliflower mixture onto the lined baking sheet and shape into 6 circles.
Assemble cauliflower crust grilled cheese
Heat a pan over medium heat.
Butter one side of each slice of cauliflower crust.
Place one slice of bread in the pan, buttered side down, sprinkle with the cheese, two slices of bacon, and top with the remaining slice of cauliflower crust bread, buttered side up.
Each sandwich is 400 calories
Creamy Tomato Soup
I chose the recipe below because it had all the ingredients I think a great tomato soup should have: roasted tomatoes, fresh basil, and a touch of cream. The only thing I altered was no sun dried tomatoes. I love them, but don’t think they go well with a soup.

I did serve my kids the same thing however instead of the cauliflower bread I did regular grilled cheese.
Adult version as plated is 561 calories
