Grilled Chicken, Quinoa, and Arugula Salad with Champagne Vinaigrette
This is a great springtime salad. I recently visited CPK and they have a salad similar to this that I absolutely loved, so I tried to recreate it. Anytime you make your own dressing you cut back on calories as well as additives. This vinaigrette has 9 ingredient versus 25!
Grilled Chicken, Quinoa, and Arugula Salad
2 grilled chicken breast (I grilled earlier this week for easy preparation)
1 C of cooked quinoa
4 T feta cheese
1 C cherry tomato’s
1/2 C croutons
1 container of baby arugula
fresh cracked peper
I also added a handful of spinach
I followed the ingredients of this recipe exactly, however I just shook the ingredients in a mason jar instead of blending which was easier and turned out great.
Meal as plated 400 calories
