Roasted Tomato and Arugula Pizza

I am once again using mainly Trader Joe’s products. This pizza is for a sophisticated palette its not suited well for kids. However you can change the recipe any way your family desires.

Roasted Tomato and Arugula Pizza

Roasted tomato pizza ingredients


1 whole wheat fresh pizza dough (Trader Joe’s)

1 C cherry tomatoes

4 cloves of garlic

1 C mozzarella

2 T olive oil

1/4 C sun dried tomatoes

1 C arugula

balsamic glaze

red pepper flakes

Italian sprinkle


If possible try to roast the cherry tomatoes and garlic ahead of time. You do this by pre-heating the oven to 250 degrees. Toss the whole cherry tomatoes and unpeeled cloves of garlic in olive oil and salt and pepper. Roast low and slow….for 2 hours to really bring out the flavor. If you are unable to do this place the tossed tomatoes and galic in the oven while it is pre- heating for the pizza.

Pre-heat oven to 350 degrees. Flour your surface liberally¬†for the dough. Roll out your dough until desired size, add more flour as needed so the dough doesn’t stick. Place the dough on a pizza crust or baking sheet and bake for 4 minutes to make the surface ready for assembling your pizza. After pre-baking remove crust from oven and brush with olive oil, Italian sprinkle, and salt and pepper. Take you garlic cloves and peel off the outer layers. Rub the garlic cloves onto the crust. Top with your sundried tomatoes and roasted tomatoes. Sprinkle the cheese evenly on top. Bake pizza for 10-15 minutes.

Remove and top with arugula and drizzle with balsamic glaze and red pepper flakes.

Each slice is approximately 200 calories
