Vegetarian Stuffed Peppers

This recipe is so easy to make and requires no pre-cooking. Just mix and bake. You can choose to use meat but this was easier and less calories. I used mainly Trader Joe’s products for this meal.


5 green bell peppers

1 can petit diced tomatoes drained

1 package instant brown rice

1 package of meatless beef (Trader Joe’s)

1/3 C bread crumbs

1/4 C parmesan cheese

a dash of salt, pepper, and garlic powder

Ketchup to top

Stuffed pepper ingredients







Pre-heat oven to 375 degrees. Cut the tops of green peppers and remove seeds and core. You may need to cut off part of the bottom to create a flat surface so they can stand up. In a mixing bowl combine the meatless beef, rice, drained tomatoes, and parmesan cheese. I also added salt, pepper, and garlic powder. Spray a glass casserole dish and stand up the peppers. Fill them with the mixture and top with a swirl of ketchup and bread crumbs.

Cook for 30-40 minutes or until the peppers are soft to the touch.




Meal as plated 400 calories
