Veggie Packed Crock Pot Spaghetti

I have been making my own pasta sauce for a long time. It’s a work of art to perfect a sauce that you made from scratch. It’s also a lot of fun. You can create whatever you want. I enjoy putting a lot of ingredients into my sauce but you can limit if you don’t feel as creative. I pack a lot of veggies into my sauce, because you can easily hide them and the kids love it. It was very hard for me to create a recipe for this blog because each time I make my sauce it’s a little bit different. Below is the recipe I put together for everyone to enjoy!


2 sweet onions

1/2 bag of baby carrots

5 cloves garlic

3 C vegetable stock

1 can petit diced tomatoes drained

1 large 28 oz can crushed tomatoes

4 T sugar

2 T Italian seasoning

2 T Italian sprinkle

2 T olive oil

1 bay leaf

5-6 leaves fresh basil

1/4 C heavy whipping cream

1 C parmesan cheese

salt / pepper


Start by roughly cutting up your onions. Place the onions peeled garlic, and carrots into a food processor and pulse until you have the consistency of apple sauce. Pre-heat a pan with olive oil and add the veggie sauce to the pan. This should sauté over medium heat for about 15 minutes. While cooking if you need more liquid add in some vegetable stock.

Add this mixture to a crock pot. In addition add in the drained petit diced tomatoes, crushed tomatoes, 1 C vegetable stock, bay leaf, seasonings, and sugar. Cook on medium for several hours, adding in more stock if you need more liquid. Right before serving add in the parmesan cheese, cream, and fresh basil leaves. I served with whole wheat spaghetti.


Meal as plated 500 calories
