Honey Lemon Ginger Chicken with Teriyaki Broccoli

Posted in : Ethnic, Kid Friendly, Meals, Meat on by : rereinke@yahoo.com

I always lean toward Asian as a meal of choice.  The problem is most Asian dishes are loaded with preservatives and additives, but not this one. This was a great CLEAN recipe for homemade Asian! The flavor combination of real honey and lemon tasted restaurant quality and my children loved it as well.

to reduce the calorie content I served my chicken over quinoa instead of rice. I garnished the plate with a lemon and some green onion.

Teriyaki Broccoli

2 heads of broccoli florets

2 cloves garlic

1 shallot

1 tsp sesame oil

chicken stock on hand for sautéing

red pepper flakes

1/2 C teriyaki sauce

Wash and cut the broccoli florets, shallot and mince the garlic. Pre-heat  a wok or sauté pan to med/high heat and add the sesame oil. Add the broccoli, shallot, and garlic flipping frequently to prevent burning. Sauté for 5-8 minutes adding chicken stock if needed.  Then add all the seasoning as well as teriyaki, sauté another 3 minutes then remove from heat.
