Grilled Chicken Salad with Strawberries and Feta with Green Onion Couscous
What a great way to incorporate fruit into a dinner and a salad. I m always intimidated by using fruit in a salad because it’s hard to get the flavors to work together for the right combination. However this recipe married them successfully! I enjoyed this meal on the deck with the family and a nice glass of wine.

It paired very well with a side of couscous
Green Onion Couscous
1 C couscous (I used tri-colored)
2 C Chicken Stock
1/4 C Feta
4 Green onions diced
1/2 yellow cherry tomatoes
Cook the couscous as directed, it is a very quick process. Let the couscous cool and fluff with a fork. Then add in the feta, green onions, and tomatoes diced. Season with salt and pepper to your liking.
One serving of this is 150 calories equals 2/3 C.
