Sweet and Spicy Salmon with Quinoa Detox Salad

Inspired by a recent trip to Savannah I wanted to cook something with honey that I purchased from my trip. The honey I used is called Tupelo honey which is a special honey that is harvested in a mere 10 days. The Tupelo trees only bloom for a very short period of time and the bee makers bring the bees to the trees to get this special honey. It is so sweet and smooth and perfect for this recipe.

Sweet and Spicy Salmon

Ingredients:

4 salmon filets

2 T olive oil

2 T honey (I used Tupelo)

1 T cumin

1 T chili powder

1 T brown sugar

Instructions:

Mix the oil and honey together in a shallow dish and add the salmon coating both side with the mix. Let stand for 10 minutes. Meanwhile Mix the cumin, chili powder, and brown sugar. Put the dry rub on both sides of salmon. Broil the salmon for 15 minutes. The salmon gets a crusty brown layer on top.

Each filet is 340 calories

This is a great recipe to make ahead of time, and make a lot of, so you can bring it in your lunch and eat healthy all week! You can eat it warm, room temperature, or cold.
