Sweet Potato and Brussel Sprouts

This is a great way to get a lot of vitamins and color into your diet. A lot of people don’t like sweet potatoes and they are packed with antioxidants and vitamins. This side dish provides a different way of cooking them and a great taste. Even if you do not like sweet potatoes give this one a try you may change your mind 🙂

Sweet  Potato and Brussel Sprouts


2 sweet potatoes

1 large sweet onion

1 lb brussel sprouts

2 cloves garlic

1 pint of mushrooms

2 T olive oil

salt / pepper


Preheat oven to 425 degrees. Peel and dice the sweet potatoes and slice the mushrooms. Wash sprouts and remove stems then cut each one in half lengthwise. Dice the onion and garlic. Toss all the ingredients in the olive oil and salt and pepper to taste. Bake on  a sprayed cookie sheet for 40 minutes or until the sprouts get crispy on the edges.
