Parmesan Chicken Bites and Rainbow Vegetables
This meal is a great summer dish for the whole family.
Parmesan Chicken Bites
When I made this recipe I did NOT fry them in vegetable oil. I made them exactly as the recipe says then baked them at 400 degrees for 20 minutes. This is a much healthier option.
1 sweet onion
1 Yukon gold potato
2 large tomatoes
3 cloves of garlic
2T olive oil
1/4 C parmesan cheese
salt / pepper
Preheat the oven to 400 degrees. Heat a sauté pan over medium heat and add the olive oil. Dice the onion and garlic cloves and add them to the pan. Sautee these until the onion is translucent then salt and pepper to taste. Meanwhile slice the tomato, potato, zucchini, and squash into very thin slices. If you have a mandolin this would be a great time to use it. It is very important to get the potato thin or else it will not be done cooking when all the other vegetables are. Spray a medium casserole dish with cooking spray and add the sautéed onion and garlic to the bottom and spread evenly. Line the vegetables up in the pan to create a rainbow effect.
Top with a little salt and pepper and cover with foil. Bake covered for 25 minutes. Remove and sprinkle with parmesan cheese and bake uncovered for an additional 15 minutes.
