Spicy Grilled Chicken and Roasted Tomato Linguine

1 grilled chicken breast

1 package of whole grain linguine

2 C cherry tomatoes

2 C spinach

8 basil leaves

3 cloves crushed garlic

4 T olive oil

1 tsp. red pepper flakes

shaved parmesan cheese


I roast my cherry tomatoes for 1 1/2 hours at 250 before making this meal (see my previous kitchen tip). However if you would like it to be a 30-minute meal you can just cut the tomatoes into fourths and sauté them with the garlic. Fill a large stock pot with water and bring to boil for pasta. Add the olive oil to a sauce pan and crush the three cloves of garlic. Cook on a medium heat until garlic (and or tomatoes) are done. Add in the crushed red pepper, salt, and pepper. Cook for another minute then add the chicken, spinach, and basil. Boil your linguine and drain. Only add about 1/3 of the pasta to the mixture or your pasta to topping ratio will be off. You can eat the rest of your noodles as a side dish at a later time.  If you need additional oil add it. Top with your shaved parmesan and enjoy.
