Caprese Salad

What a great summer dish especially when the tomatoes are ripe and ready to eat. I do not put olive oil on my recipe, this not only cuts the calories down but when you have fresh ripe tomatoes you don’t need that rich flavor added to it. Less is better when making this salad.


3 large tomatoes

1/2 ball or fresh mozzarella

7-8 fresh basil leaves

balsamic glaze

Italian Sprinkle

fresh cracked pepper


Slice the tomatoes and lay them on a paper towel for a minute to soak up a little bit of the water. Slice the mozzarella as thin as you can. Roll the basil leave together and slice into spirals. Place the tomatoes and mozzarella alternating in a circle. Top all with basil, Italian Sprinkle, fresh cracked pepper, and balsamic glaze.

    mmm.. looks yummy! Do you use a specific balsamic glaze?
