Have you ever wondered what these potatoes taste like? Purple potatoes originated in South America but you can now get them in most local grocery stores. A regular potato is great but I always feel like I’m eating a delicacy when I eat the purple potatoes. They also provide great color and pop to your dishes. I use a very simple recipe to cook them and they always turn out great.
4-5 purple potatoes depending on the size or how they are sold
2 cloves of garlic
1 T butter
1 T olive oil
1 small sweet onion
salt / pepper
Pre-heat the oven to 450 degrees. Wash and cut the potatoes into cubes. Cut the onion into cubes or slices whichever way you prefer to eat them (you may omit the onions). Spray a cooking sheet liberally with cooking spray and lay the potatoes on top. Crush the cloves of garlic over the top of potatoes. Sprinkle your seasoning on top as well as the butter and olive oil. Toss all ingredients with your hands and bake for 35-40 minutes or until crispy.
