Zucchini Chips

I have recently become bored with regular zucchini,  it can be very bland and almost watery when you sauté it. I wanted to try something fun and summery. These chips are a great healthy alternative to regular French fries.


2 large zucchini

1 C Panko bread crumbs

1/4 C parmesan cheese

1 tsp. all purpose seasoning

1/2 C half and half


Preheat the oven to 450 degrees. Slice your zucchini into about 1/8 inch slices. I did not use a mandolin slicer because I was afraid they would be too thin. This thickness allows them to be breaded while maintaining their shape and firmness. Place the half and half in a shallow bowl; in another bowl add the Panko bread crumbs, parmesan cheese, and seasoning and mix. Dredge the zucchini into the half and half and then into the dry mixture…I did about 5 at a time. Place the chips in  a single layer on a large baking sheet. Bake for 12 minutes flip the chips and bake an additional 10 minutes or until golden brown.
