Fresh Tortellini Balsamic Salad
I have made this for countless parties as a side dish. It feeds a lot of people and uses ingredients that are pleasing to a group, yet slightly different then your typical pasta salad. If your tired of cole slaw, pasta salad, baked beans as a side try this!
1 package of fresh tortellini (found in the refrigerated section by the cheeses)
1 package of cherry tomatoes
1/2 red onion
10-12 fresh basil leaves
1/2 C fresh shaved parmesan cheese
1/4 C olive oil
1/8 C balsamic glaze
salt / fresh cracked pepper
It’s important to use fresh ingredients to make the flavor of this dish pop. I like to buy the tortellini, parmesan, and tomatoes at Costco they have great inexpensive ingredients. This dish can also be prepared 1 day ahead of time, if you are running low on time the day you need the dish. The longer the ingredients marinade the better the flavor.
Bring a large pot of water to boil and cook the tortellini as directed on package, but make sure it is al dente so it doesn’t get mushy. After cooking let it cool in the strainer and add 1 T of olive oil to the noodles to prevent them from sticking. Meanwhile cut the cherry tomatoes into slices as well as the onion and add them to a large serving dish. Add the balsamic glaze and the rest of the olive oil. Place the tortellini into the bowl and gently toss the ingredients all together. This can sit overnight or as little as 30 minutes. Right before serving add in the basil leaves torn, parmesan, and salt and pepper to taste. You may need to add additional oil or balsamic to get the right consistency.
