Chicken Sausage and Green Bean Pappardelle
This is a Robyn’s Nest exclusive that uses a great combination of savory and spice. I recently visited Costco where they were sampling chicken sausage. I wasn’t sure I would enjoy the sausage bun style so I created this recipe as a great way to use chicken sausage.
1 package of Pappardelle (got mine at Trader Joe’s)
5 chicken sausage links (I used onion and cheddar)
1 package of microwavable haricot verts (this is basically a French green bean….skinnier then the regular type)
1/2 sweet Vidalia onion diced
1/2 red pepper diced
3 cloves of garlic minced or crushed
1-2 C chicken stock
4 T EVOO (extra virgin olive oil)
1 tsp Italian Sprinkle (can use just salt and pepper)
1/2 tsp red pepper flakes
4-5 fresh basil leaves
parmesan cheese for topping
Add 1 T of olive oil to a saute pan and bring to medium heat. Add in the garlic onion and red pepper. Saute for 5 minutes or until onion is translucent.
Meanwhile bring a large pot of water to boil for the pappardelle (make sure to salt the water). Microwave the green beans, but only for half of the recommended time, in their stem fresh bag. Immediately remove them from the bag cut into bite size pieces and add to the other vegetables. While the veggies are cooking add chicken stock as needed to prevent the veggies from sticking and enhance the flavor. Slice your chicken sausages and add them to the mix, continue to cook an additional 5 minutes.
Boil your noodles to be al dente. Drain the noodles, and add them to the sauté pan along with your pepper flakes Italian sprinkle, and fresh basil. Top with remaining olive oil and fresh parmesan, serve immediately.
