Kung Pow Chicken with Quinoa
30 minute meal alert!! This whole meal from start to finish took less then 30 minutes.
In trying to eat more clean and healthy…..this is a great recipe to make. When you eat more healthy things tend to be more bland however this Kung Pow Chicken is spicy and even a little sweet. I used a recipe that was provided on the My Fitness Pal App but did modify a few things.
The things I changed were……. I omitted the coconut aminos, and added green onion for a little extra crunch. In addition I served with Quinoa which was a great accompaniment but kept the recipe gluten free.
