Greek Chicken Pitas with Grilled Corn and Caramelized Onions

Nothing says summer better then this dish. It’s fresh, flavorful, and healthy. When prepping for this meal I actually forgot to buy Greek seasoning so I used a couple of recipes to form my own Greek seasoning. Below is the recipe however you can just purchase Greek seasoning for the chicken.

Homemade Greek Seasoning:

2 teaspoons salt

2 teaspoons garlic powder

2 teaspoons oregano

1 teaspoon cinnamon

1 teaspoon black pepper

1 teaspoon Italian seasoning

1 teaspoon dill weed

1 teaspoon marjoram

1 teaspoon cornstarch

1/2 teaspoon nutmeg

1/2 teaspoon poultry seasoning

Mix all ingredients together



Greek Chicken Pitas


4 chicken breasts (Bare brand chicken is the best)

4 T Greek seasoning

1 tomato diced

1/2 of cucumber peeled, sliced and deseeded (see my kitchen tip  http://robynsnest5.com/2015/06/08/kitchen-tip-cucumbers/)

1 cove fresh garlic minced

1 T fresh lemon juice

1/2 C reduced fat feta cheese

4 whole wheat pitas


Season the raw chicken breasts liberally with Greek seasoning.  Let the chicken marinade a few hours (this process can be done a head of time even overnight). Meanwhile dice the tomato and mix with chopped cucumber, feta,  and the fresh garlic clove. Add the lemon juice and a dash of salt and pepper.

let this mix sit and the flavors merry, while you cook your chicken. Grill your chicken how you desire (on the BBQ pit or stove top). I grilled mine on a charcoal grill.

Let the chicken rest for 5 minutes then slice. Cut your pitas in half then fill them with your chicken and top with cucumber tomato mixture.


In addition to grilling my chicken I grilled  onions and corn on the cob.

Yields 4 full Pitas
