Peach and Burrata Cristini
This dish was inspired by a local restaurant Katie’s Pizza . My husband frequently goes to lunch there and ordered this fresh flavorful summer dish the other day. We worked together and both tried to recreate it. It uses a blend of flavors I would not normally pair together but they work out wonderfully. It is a simple dish to make, however the ingredients must be fresh and in season to make the flavors pop.
1 loaf of bakery style white bread (we used country French)
2 medium ripe fresh peaches
1 container of Burrata cheese (can be found by the fresh mozzarella in the store)
Burata is a fresh Italian cheese made from mozzarella and cream
fresh honey (we used Tupelo which has a more intense flavor) for drizzle
balsamic glaze for drizzle
extra virgin olive oil (EVOO)
salt / pepper
Pre-heat your oven to 450 degrees. Cut your white bread into 1/2 inch slices and line a baking sheet with them. in a small bowl pour about 1/2 cup of EVOO and add salt and pepper to it. If you have a favorite spice like we do you can add that as well. Brush your slices of bread with the EVOO mixture. Bake the bread oven 4-5 minutes until they are lightly browned on top. Do not let the bread burn. Remove from the oven and let cool.
Then take little pieces of the burrata and lay them out on the bread lightly smash the cheese to form a layer on top of the bread.
Slice your peaches thinly so you can fan the slices on top of the bread.
Then top your burrata with 3-4 peach slices, and a pinch of micro greens (see photo)
Then using the back of a spoon drizzle honey on top, and drizzle the balsamic glaze. Top with fresh cracked pepper and a pinch of salt.
