CPK-Copycat Arugula Quinoa Tomato Salad

I love the arugula quinoa salad from California Pizza Kitchen, so this is my recreation of it. You may add any dressing you would like but I found a Champagne Vinaigrette to be the best pairing.

Champagne Vinaigrette

Ingredients:

1/4 C champagne vinegar

1/2 extra virgin olive oil

1 shallot diced

2 T honey

2 T Dijon mustard

salt / pepper to taste

Instructions:

Mix all ingredients together and let marinade for at least 30 minutes. For best results you should blend the ingredients for 1 minute.

 

CPK Arugula Quinoa Salad

Ingredients:

1 package of baby arugula

1 C cooked cooled quinoa

1/4 C sun dried tomatoes

1/2 C cherry tomatoes (optional)

1/4 C feta

2 T balsamic vinegar

Instructions:

Dice your sun dried tomatoes and soak them in the balsamic vinegar while you assemble the rest of salad. mix together the arugula, quinoa, feta, and tomatoes. Top with the sun dried and champagne vinaigrette.
