Healthy Taco Soup
This recipe is a great way to ease into fall. Its super easy and can be customized to any diet. There are may variations of this recipe out there but this is the collaboration I found to taste the best. My whole family (even the kids) loved this dish!
4 ears of fresh corn cut off the cob
1 can drained and rinsed black beans
1 can drained and rinsed pinto beans
1 can drained and rinsed small red beans
4 C chicken stock
1 sweet onion diced
1 lb ground turkey breast
4 cloves crushed garlic
1 T cumin
1 T chili powder
1 tsp sugar
fresh cracked pepper and salt to taste
For toppings that pair well use: fresh avocados, sour cream, onions, cheddar cheese, and hot sauce
In a non-stick pan sauté the ground turkey, onion, and garlic about 20 minutes or until the turkey is done and the onions are translucent. Meanwhile add to a croc pot all the beans, corn, cumin, chili powder, sugar, and chicken stock. After the meat is cooked add it to the mixture and cook on low for 6 hours. Top with your favorite ingredients.
Meal as plated 500 calories.
