Greek Chicken with Roasted Fingerling Potatoes

Roasted Fingerling Potatoes

 

Ingredients:

1 bag of mixed fingerling potatoes

3 T EVOO (extra virgin olive oil)

2 cloves of crushed garlic

Penzey’s Fox Point Seasoning (can substitute Italian sprinkle, or just salt/pepper)

Instructions:

Pre-heat the oven to 425 degrees. Spray a baking sheet with non-stick spray. Cut the potatoes into medallions and toss in the EVOO. Crush the garlic over top and add 2 T of Fox Point seasoning. Mix together and spread out in a single layer on baking sheet. Bake for 35-40 minutes or until potatoes are crispy on edges.
